Ingredients
- 3 pounds Ham
- 4 cloves
- 1 tablespoon black peppercorns
- 3 cups lager beer
- 3 cups water
- 4 Summeripe® peaches; pitted, halved and soaked in syrup
- Basting Gravy:
- 4/5 cup maple syrup
- 4/5 cup peach syrup
- 1 tablespoon dried mustard
- 12 small onions, each with a clove inserted in the center
- 2/5 cup white wine or dry cider
Directions
- In a large saucepan place
the ham, 4 cloves and the black pepper and beer. Add in the water
until it covers the ham. Let simmer for about 90 minutes at very low
heat.
- In a small saucepan, mix together all the
ingredients of the gravy and cook at medium heat for 15 to 20 minutes,
or until gravy gets to a smooth texture.
- Remove the small onions, but keep them for the presentation.
- Remove ham from large saucepan and dry it out. Baste it with a large quantity of gravy. Place it in the oven at 375°F, uncovered, for 30 minutes and baste it 2 to 3 more times while cooking so it caramelizes.
- Meanwhile, put peach halves flat side down on a non-stick pan
over medium-low heat and drizzle a small amount of gravy over to
lightly caramelize.
- Serve ham on a large serving dish. Place the candied peach halves and small onions all around. Serve with remaining gravy.
